currently have a one car garage, 16' x 24'. I have poured a concrete foundation to expand the garage to 22' x 24'. biggest issue I have is finding the best way to extend the hip roof an additional 6'. the current roof is in excellent condition with new shingles or I would remove and use trusses! any insight would be appreciated!!

Hip roof has joists that leans on load carrying beam (hip beam?). This is same as load carrying ridge beam like in a cathedral ceiling roof. So you need to know the capacity of the roof you have, which means you need engineer's inspection and report on what kind of additional roof you want.

Stick built hip roof is like a jigsaw puzzle. You need to have a framer onsite that knows what they are doing. Hip roof is not an easy project for a diy'er the first time around. I know how I would do it, some disassembly of the wall that's being added onto til I get to the common rafters. Then build back out over the addition from there.
