I'm guessing within about 20 - 40 minutes or so depending on what size bag/how much you are using. Should be plenty of time for you to set your post.

I would wait a few hours before any weight or stress is put on it. Check the instructions on the bag to make sure.

No, I wouldn't take that long. Probably 20-30 minutes at best. "Initial set" means you can walk on it and only leave a small footprint. You need it much more fluid than that.

You really don't need much strength for concrete around a post.

High strength 4000 psi is a waste of time and makes you push too fast because of the set.

Put a post in and brace it is you are going to do several at once and the come back for finishing the exposed top.

Even the weakest concrete will be stronger than the wood post or soil surrounding it.
