This gap looks like it was there for drywall can you confirm that a 1/2" something would fit inside that?

That gap is 3/4 of an inch. Here are a few more pics. Why would there be a raised shoulder inside the 3/4" track? I thought of using wood inside this track, to butt the trim against for brad nailing, but that shoulder kinda screws that idea up:

It does Neal, thank you; I guess I'll just make the inserts a width that ignores that protruding shoulder inside the gap.

An extension jamb goes in the channel. The step is in the bottom of the channel because Andersen made jambs have the matching notch milled in them. I cut the notch with a table saw because Andersen parts are expensive.

I figured as much, though these windows are made by Northstar. I will take a page from your book & notch the jambs as well.
