I'm just about to put cedar clapboard on my house. I'm having trouble sorting out what my best option for nails is though. Stainless steel seems to be the best bet, but a fairly expensive. I'm wondering if anyone knows of any products (shellac, etc) that could be applied over the wood if we used galvanized nails that would prevent staining from the nails?

Check out Maze nails. They are designed for exterior use on siding and trim. They even have a smaller head so aren't as visible. Lowe's sells them.
