Horizontal, less seams and easyer to finish.
Do the ceiling first, do the top piece on the wall second.
Keep bottom piece 1/2 up off the floor.
If the walls taller then 8" special order wider dr ywall from a real drywall supply house.
Use the longest pieces possible you can get into the room.
