My kitchen has brick walls, with granite counter tops that butt up against the brick walls. The brick wall is essentially the back splash. Do I need to caulk the seam where the granite counter top meets the brick brick wall?

Currently there is no caulk or grout in this seam. Based on the way it looks, I would think dirt and liquids will fall into this seam unless it is caulked.

You definitely need to caulk using a water resistant product. You may even be able to find it in a color that blends with your grout or use clear.
