So my blower fan on my furnace/ac unit was making a very loud humming noise and would not rotate unless helped. I replaced the capacitor and it started working no issues. After about 20-30 min of running my AC the fan shut off again and would not run unless turned off and on but would shut off after some time. Any hints or ideas on what could be the cause?

Could be a defective control board, thermostat, motor, or other safety switch. Need to check with a meter to see what is the cause.

I've checked the thermostat but it seems to be working fine. Is it possible that if the coils freeze it would cause the fan to have issues as well? What should I check for?

Are you seeing any icing at the coil?

Generally, the fan will continue to run even with a frozen coil.

Need to check the components with a meter, when the blower stops running next time.
