I tack on 1/2" jamb extenders (wide jambs are too expensive), then trim the door jamb, nailing into the jamb only. I think this is fine.
Another way would be to use metal door jambs, like you see in commercial settings, then caulk the joint. Obviously you would want to install the tile so that you had 1/8" joint against the jamb.
A third way would be to make your own jambs out of 1 1/4 or 1 1/2 wood and just tile up to them and caulk the joint, same as above.
That is all I can think of. I'll be interested to see if anyone else has some other solution.
