I currently have a fridge in my garage.

All the outlets in my garage are GCFI. The receptacle the fridge plugs into is GFCI, and then a number of outlets in the garage and one outside the house feed from this circuit. So if someone out back of my house trips the GFCI, the fridge loses power until the GFCI is reset.

My understanding is that all non-locking receptacles in a garage need to be GFCI.

Would it be up to code if I ran a single 20A circuit to a L5-20 receptacle and then changed the plug on my fridge to L5-20?

The code doesn't say locking are exempt from the gfi requirement. It says all 15 and 20 amp 120 volt receptacles require gfi protection . The single receptacle exemption has been removed.

From the 2011 NEC.

210.8 Ground-Fault Circuit-Interrupter Protection for
Personnel. Ground-fault circuit-interruption for personnel
shall be provided as required in 210.8(A) through (C). The
ground-fault circuit-interrupter shall be installed in a
readily accessible location.
Informational Note: See 215.9 for ground-fault circuitinterrupter
protection for personnel on feeders.
(A) Dwelling Units. All 125-volt, single-phase, 15- and 20-
ampere receptacles installed in the locations specified in
210.8(A)(1) through (8) shall have ground-fault circuitinterrupter
protection for personnel.
(1) Bathrooms
(2) Garages, and also accessory buildings that have a floor
located at or below grade level not intended as habitable
rooms and limited to storage areas, work areas,
and areas of similar use
(3) Outdoors

You could always change it so the remaining receptacles are tied to the LINE side of that GFCI instead of the LOAD side. Then go install a 2nd GFCI at the next location to protect all those other receptacles. That way, the refrigerator is isolated from the nuisance tripping.
