Bought some EMT conduit. It was over 100 outside. The conduit got so hot a few hours later I couldn't touch it. I'm thinking if its going to be out in the hot sun will that damage the insulation on the cable? Plastic conduit doesn't get so hot but after a while plastic cracks in the hot sun.

There are derating factors due to ambient temperatures that must be used when figuring out the ampacity of wires. These factors will not depend on what type of conduit you run.
