I have a light fixture with 25 x 20 watt bulbs in it and I would like to put it on a dimmer.

I know that a 500 watt dimmer would do it but I am leaning towards putting in a 1000 watt dimmer.

Is this overkill?

I'd install a 1000W dimmer. Depending on the installation you may be required to derate the dimmer's max wattage.
