Hello everyone.....
I have a couple of questions regarding making snack sticks and summer sausage.
I received the tubes for stuffing sausage for our kitchen aid stand mixer and am going to attempt to make my own venison snack sticks and some venison summer sausage.
My first question is when I put the tubes on for stuffing, do I need the screen and the blade in, just the blade and no screen, or just the auger and the tube?
Please keep in mind this is my first time stuffing any kind of sausage or snack stick.
Second question is, I plan to smoke the sticks and the summer sausage on my pellet smoker. How long should I smoke it to make sure it is cooked and cured correctly?
Anyone have any good recipes that are their go to's for these items?
