I know this would seem easy but my house is no ordinary house. First off, the reason for switching out the light switch to begin with is because it got so hot that it stopped working (the screws were glowing red). I took out our dimmer switch and found 4 sets of wires going into the box...How do I install just a regular switch? Is there some fancy way I should do this?

Glowing red? Sounds like you have bigger problems. Assuming that was an exaggeration just get a switch and wrap the solid wires around each screw clockwise. Don't use the stab-in feature! I can't count how many service calls ended with me finding a bad connection where someone used the stab-in.

The most common dimmer is only rated for 600 watts before any derating. How many watts of lighting were in use at the time? Are the bulbs incandescent or fluorescent?

The new switch should be connected the same as the old switch. However only one wire should be under a screw head.
