Can I put a GFI outlet inside a gas water heater closet?

Recently had a water heater leak and mitigation took out some drywall around the WH and Washer & Dryer. The WH closet is 33" x 49". I'd like to place a GFI outlet on the far inside wall near the doorway to power my Wi-FI sprinkler unit (24 volt). When placed, the GFI would be approximately 32" from the WH casing. Is this alright?

To understand why you cannot cover a box with joints in it is because you must have access in case there is an issue with the connections in the future.
