My master soaking tub sprung a leak in the main shut-off valves. The valves are just past this picture on the other side of the floor - one for hot one for cold. When it leaked the water traveled down the copper piping where it goes through the sub floor and destroyed my laundry room ceiling.

I have it all fixed and I'm about to re-drywall downstairs, but before I do - can I cauk around those gray plastic fittings where the pipe goes through the sub floor upstairs? This way if it leaks again its only under the tub and not rubining my ceiling?

Id rather replace the ceiling dry wall than the floor under the tub.
I would NOT caulk it.
If it leaks you want to know about it sooner than later.

Isn't there's an in between place you could caulk so the next leak would go into your tub rather than under the tub? I'm picturing caulk between the inside of the tile and the pipe just past the valves.

I dont think I've ever seen supply shut off valves inside a tub. or above.

Yeah - they are behind the grate on the bottom right of the tub.

If the tub and the floor under the tub are waterproof then leaking under the tub may be preferred to leaking on the ceiling, especially if the seal between the tub and floor isn't perfect (your grate probably makes it not perfect) and a leak would be visible on the bathroom floor. If so, then I'd still prefer to caulk on the other side of the wall, under the tub (not the plywood side in your picture).
