Installing new cabinets, have 3 peninsula base cabinets where there are doors on one side and nothing on the other side. I ordered a thin matching backing piece for the exposed back sides, 34" H x 70" L.

What is the best way to fasten the backing, I prefer not to use nails, prefer to use some sort of adhesive. I was thinking using contact cement. Googling, some use 3M high strength 90 spray adhesive. Then after applying the glue or adhesive, how do you hold it until it sets.

The backing piece is basically a veneer sheet about 1/4" thick to cover up the unfinished back of the cabinets. The back edges of the cabinet side panels are probably unfinished plywood, which needs to be covered. Aside from islands, and certain suspended cabinets, usually that part is butted against a wall, so nobody cares that it's unfinished edges.

The picture above kindly posted by huesmann is a good example of what the back of my cabinet looked like prior to my gluing the 1/2" plywood strips. The sides and of course the back edges are particle board. The top edge well be hidden by a 15" stone overhang countertop, the left side will abut the wall, may have a piece of moulding, the bottom edge well be covered by the flooring, the right edge will have a piece of moulding or corner moulding.

The panel back I want to put on is thin and flexible made from pressed "paper", maybe 4-4.5mm thin, the back of the cabinet is also thin however I filled in between the 1/2" nailing/screwing strips with 1/2" plywood.

I've got these to do tomorrow. I think I will be using the FRP with a couple of dabs on the protrusions of the stove to firm it up, and outside corner molding on the edges. May be dropping some speed base around it, too, once I see what it all looks like.
