I'm not a pro plumber, but until one answers you, here are my suggestions to begin with....
A. Contact your local Building Inspection Department for local code guidance for drain/waste/vent systems and plumbing inspection and permitting requirements. If you ever sell this property, you want to have those permits (and inspection approvals) on file.
B. If local code permits it, you should be able to use PVC to replace parts of the metal d/w/v system.
C. A "mission" coupling would be best and probably required. This coupling has a stainless steel sleeve over a neoprene rubber sleeve with ss clamps to connect plastic d/w/v to metal d/w/v.
D. All fixtures and drains require vents of a speciifed size within a limited distance. I dont think that you can eliminate it.
