We recently had some professional landscaping done. I'm guessing one of the new beds was built on top of an anthill, because ants are building new anthills on top of the mulch, which looks funny. Any suggestions on what I could do to get rid of the ants and their anthills without harming the plants?

Being new I would first talk to the landscaping company as if you kill the plants they probably won't honor their warranty. They are also in the business and probably have dealt with similar many times.
