I’m about to spray the bathrooms and kitchen areas. Prime then paint. All brand new drywall.

Should I leave the areas in the bathroom and kitchen that are going to be tiled unprimed and unpainted?

Are talking about dry areas with drywall that will be tiled ??
If so, I'd prime those areas, no need to finish paint them.

Areas like the kitchen backsplash, behind the toilet, behind the vanity etc.

The Wet areas have been waterproofed with redgaurd (and obviously not painted).

No need to paint obviously. Priming doesnt hurt, and I've never heard of a tile guy complaining about overpsray on walls they are going to tile, so dont sweat it. You might want to ask your tiler if they care though...

Try to keep it off the redgaurd, but I dont think it matters too much.
