If I am updating a few rooms in my house, which do I install first; hardwood flooring, wall paneling, or ceiling tiles?

That is a rather broad question, but generally ceiling drywall goes in first, then the walls, and finished floors last. If you are installing a dropped ceiling, it is often done last. But drywall is often required on the ceiling for fire protection.

I am not intalling a dropped ceiling, I am installing a tin ceiling. My ceiling already has sheet rock and I was going to nail tin ceiling tiles to the sheet rock.
