I LOVE homemade baked bread. We have a bread machine. I guess too lazy to make it. It will change.

Doc says I have Type 2 diabetes and have to watch my sugar intake. I understand bread or carbs are just a bad. I've brought my glucose level from 278 to 108 in 28 days, so I'm on the right track, I think.

I bet stress upped your glucose.

When I was a kid my mother used to bake bread [not every month] When she did it was always 3 loaves at a time. She set them on top of the stove to cool. If I could sneak in the kitchen without getting caught I'd grab one, smear a stick of butter on it and go out the door - that loaf would soon be history. She used to tell me that fresh bread would rot my gut, I do have stomach problems but doubt that was the cause 50-60 yrs later.

They found me at age 3 behind the pantry door eating a stick of butter. Forget the bread! 😁

I'm going to start/try baking bread instead of paying $5 a loaf at the store. I got 2 one pound loaf pans. Now I will need a nice easy bread to start with. I have sunflower, pumpkin, sesame and poppy seeds. I want to bake a seeded bread.
Any suggestions are appreciated.

There was no sneaking in and out of our kitchen, we lived in a mobile home. Mom sat at the kitchen table directly across (10') from the stove. Fortunately she loved to share hot buttered bread, I can still taste it.

Suggestion or maybe just a fact. Wife says it's a little difficult to make 2 batches with identical result .
The wife wasn't too proud of this loaf . If we look closely we can see a big air bubble under the crust top .
That wasn't too bad but the bread had small air pockets all throughout . Taste good but unusual .

I'm that way to. Nothing I make comes out the exact same each time. And like I have said before that can be a good thing or a bad thing.
Artisan crusty bread has holes. But not big openings. Or not to many big openings. But all the bread I like the best has holes all through it. I have to butter around some of the holes.

Artisan crusty bread has holes. But not big openings. Or not to many big openings. But all the bread I like the best has holes all through it. I have to butter around some of the holes.
I take advantage of holy bread by filling those cavities with strawberry jam .

If the bread has large air pockets, there is too much yeast in the dough.
