I’m watching daughters house and feeding her bunny while she’s on vacation so she sent me money and told me to get a pizza for myself.

Instead I thought I’d treat myself to a steak and went to Publix this morning for a ribeye. Wow ! They just had a few on the counter and they were 1 pound, and thicker than what I want for my skillet but they were $18 a lb. That was a little steep for me. I haven’t bought steak for several months but they weren’t that high!
The local grocery had porterhouse/T-Bone for $7.99 a pound last week. I got a few. Very nice. Well marbled. But there was one T-bone and one Porterhouse per pack. It was marked as Porterhouse.
At Costco the ribeye is around $13 a pound and NY Strip runs about $11. Meat has gone up, but not enough to stop me from buying it.

NOT AN EXPERT,

I say, "sometimes" you pay for what you get,
but also make sure you know what you get, thickness is important, look of the meat and marbling
but MORE important is how you prep and cook it,
even a 50 buck steak can suck if you dont prep it and cook it properly

with food I "NEVER" shop by price, I look for what I want and if the price is good BONUS,

except when I buy a ribroast and I make damn sure the fam know I spent 50 bucks on that piece of meat
Totally agree. It seems I get the best marbled steaks due to people picking out the ones that are the most red. I am happy they have no idea as to what they are doing. It works out in my favor.
Marbling is the very first thing I look at when buying steaks.

I don’t eat marbling fat so I’m one who buys red.

1150 lbs. that’s hanging weight. $1070 dollars in the end for my half. It’s just more convenient for us. Just me and my wife but we have grandkids every weekend. And we are very social and cook for different occasions during the year

We have been gotten a 1/4 of beef (cow), hamburger, steaks (flanks, rounds, sirloins, ribeyes, t-bones, filet mignon, etc.) and several different roasts from a local rancher. First time was about a year ago and second time about 3 months ago. Last one was 40 lbs of burger, and about 80 lbs of steaks and roasts. It was just under $900, which at the time I thought was expensive, but the wife wanted to do it because it's all natural, grass fed. From what I'm reading here, it's looking like a smart move, although I just saw petite sirloins on sale at the grocery store for $3.97/lb (limit of 2 packages, though), which is about the same as the sale price for hamburger has been.

We go to Restaurant Depot (restaurant supplier) and buy boxes of individually wrapped filet mignon for about $30 per lb. For 6 oz. steaks it is about $11 each for restaurant quality meat that costs 3 times that in a restaurant. It is all edible so 6 oz. is plenty. Wrap them with bacon, grille them and enjoy.

Then don't buy good steaks. You are wasting your money. Marbling is what makes a steak tender and flavorful. Look at Prime beef vs USDA Choice. A perfect example of a steak and a great steak.
When the meat man brings out all the steaks, I will happily wait for you to make your choices.

Last time I had steak with marbling I spent so much time cutting fat out it looked like I had diced up my steak! Filets I buy never have marbling and they are so tender and juicy they almost melt in your mouth.

Then you probably wouldn't care for this A5 Wagyu Ribeye which is arguably the most expensive steak on the planet.

Nooooooo! Japanese steak. I care more about my waist line than what I eat. BUT, if you bought it I’d take a bite…..or 2. You wouldn’t mind me eating off your plate would you? Also, I’d have to know how far away from the Japanese nuclear power plant meltdown several years ago that this cattle are raised?

Everyone is different and how they want there steak cooked.
People equate pink running red, with raw, blood and dangerous to eat.
WHICH it's not.

I schooled my daughter on steak from the age of 7, she only eats mid rare !
Wife was horrified to find pink steak, saying she would not eat it, but after seeing DD she now loves it

Her familly are the same, Christmas dinner they wanted all there meat BURNED (I heard my wife saying)
"hey you should actually eat it how adrian cooks it"

It's all about education and honestly how people like to taste there food.

So with marbling, if you want your steak well done and burn't your wasting all that beautiful marbling.
ALSO marbling is fat and that is cholesterol, so it AINT good for your heart.

So in short if people don't want marbling, that's fine, and if people wanna pay for marbling and don't cook it right
that is always there right.

I only have one adage, you come to my house you eat the food how I cook it or go to macdonalds
(only j/k as a host I will cook the food HOW you like your doneness)
