Recessed Lighting Spacing in Kitchen

I'm installing 6, 6" recessed lights in my kitchen to replace two 4 lamp fluorescent fixtures. I'm having difficulty on the spacing. It seems most everyone recommends in line or close to the countertops. When I modeled this by sticking my LED light near the ceiling, the shadows from the uppers seemed to be pretty harsh. My LED lights have a 120 degree beam angle.

By playing around a bit, I noticed that if I moved the light out by about 12-14" off the countertop, the shadows were much less severe. If I move them so far out, I'm afraid that I'll end up with shadows while I'm working in the kitchen.

Any suggestions?

Thanks!
