kitchen counter edging?

We are trying to decide the best edging for our kitchen counter tops. We've chosen black pearl granite and want the look of a thicker slab. I would have thought the best option would be where they miter both edges then glue, but the installers are saying it is difficult to do. They are saying that the stone will chip along the sharp edges and can't get a good tight seam. They are recommending that we go with the stacked option where they glue the piece on the bottom of the existing edge. It just seems to defeat the purpose since the seam can be seen. Any suggestions are appreciated.
