Hinges stuck to doors

I'm trying to cheaply update a kitchen by painting the crappy cabinets, but I've run into a problem removing the hardware. It appears they stained and sealed everything with the hardware attached. I can get the doors off the cabinet face frames, but the wood below the hinge is unfinished. Not a major problem...

However, when I attempt to remove the hinge from the door itself chunks of the wood are being removed as they're stuck to the hinge. I don't really want to have to strip everything but we do want to replace the hinges and get a good paint job on what we have. The cabinet doors are oak plywood with trim on the front only, so the hinges are screwed directly to the plywood.

I've tried cutting around the hinges with a utility knife before we attempt to remove them, but it is acting as if there is a layer for finish between the hinges and the wood, and it's stronger than the plywood.

Suggestions?

Heat the hinges with a heat gun. Don't blister the finish from the heat.
