my shower tiles began to lift and break SO I started taking the wall down (i'm confident I can replace the walls) I just have to find the turn off valves for the water

Is there a question here?? Shower shutoffs may be built into the valve, be in a space behind the shower(in a closet), or under the floor in the basement, otherwise, you may need to shut off the whole house. If you intend to retile, don't use drywall, use hardibacker or duroc tile backer.
