LOL, just received notification that someone posted to my thread, so I checked back in.

In 2015 I did cut out all the old copper runs, but left the copper risers and tied into them with the PEX and Sharkbite fittings, and saw immediate results with much better water pressure at all taps. Haven't insulated as we haven't been back this year yet. So I can't even say how the PEX did last winter, but I did do the usual draining and filling of traps with antifreeze, etc.

I'll try to do a better job of keeping the thread updated in the future
