Subfloor thickness


I have been requested by a customer to remove flagstone which with it's mudset bed could be about 2 1/4" to 2 1/2" thick and replace with hardwood flooring. I will need to build up the floor to get as close to current floor height as possible. My question is, how many layers of plywood can i install before installing the wood flooring. The house is built on grade with a concrete foundation.
