What's for Lunch


Refrigerator surprise.
Left over BBQ thighs, frozen mixed veg., rice with Soy + other juice i don't know about. OH, bout forgot, a left over roll but they're about gone.

We've been working at a lady's house for the past month a couple of days a week to help her with her kitchen renovation. She cooks lunch for us every day !! Tacos one day, Bratwurst another, hamburgers. But on Tuesday we had bone in rib eye steaks that weighed, I know, 2 lbs each and were 2" thick. Grilled to perfection, potato salad and grilled zuccini strips.

Today was my favorite meal. Kind of like yours @SeniorSitizen , a fridge and pantry cleanout. I had some onions, potatoes and pepper strips to use up. As well as some eggs.

I put the potatoes (Simply Potatoes Diced Potatoes) in the skillet with some EVOO and a bit of butter and salt to get them starting to cook. After a bit, I put some water, about a 1/4 cup and put a lid on them to help them cook a bit faster.

Then I took the onions, peeled them down to the good spots and diced them up fine. And put them in another skillet with EVOO and butter and salt to sweat down. Then I cut up some turkey sausage and put them in with the potatoes.

I whisked 6 eggs with some worcestershire sauce and then diced up pepper strips leftover from Fajitas the other night.

I put all the veg in with the potatoes and mixed them together. Then I put the eggs in , stirred them in to scramble them. Just as they started to set, I put in Sargento 4 State Cheddar and served them up with Cholula.

MMMM, MMMM Good. Now, just a light dinner and all good for day.

If i could travel at Warp Speed and be invisible the crew's lunch conversation may go something like this. Who cleaned the area from 10 am to 12 ? I don't know but they did one hellofahjob. Who's place setting is that where that huge steak is ? I don't know but it is disappearing. I always wanted to write fiction.

I was kind of thinking how I could horn in on this as well.

While a Rib Eye is not necessarily my favorite cut of meat, but, I am always more concerned with how well it is cooked. A cheap cut of meat cooked perfectly is always better then a great cut of meat cooked poorly.

And, I can clean as well as the best of them....
