Szechuan Cucumber Relish


Ok Nik here ya go, this is the cucumber recipe I've made. Not a pickle but a relish. Authentic Chinese.

1 1/4 lb. cucumber
15 slices garlic
1 teaspoon brown pepper corn
1 teaspoon hot bean paste
2 Tablespoons hot oil (red pepper oil and I'll say optional)
1 Tablespoon salt
2 teaspoon sugar
1 Tablespoon brown (apple cider) vinegar
1/4 teaspoon MSG (again I'll add optional)

Cut cucumber into triangles shapes or diagonal and place in a bowl and sprinkle with salt. Let set for 2 hours. Wash in cold water, put back in bowl.

Add remaining ingredients, mix and soak about 3 hrs.

Probably just 3 or 4 cloves sliced. Not whole cloves of garlic. Now that would be a lot.

Now that makes more sense. Never heard of brown pepper, do you have to buy that at an Asian store?

You should be able to find it at an Asian store. Also can be had from Amazon. Szechuan Peppercorn or Sichuan Peppercorn, same thing different spelling.

I've also bought Korean bean paste (Gochujang). That is different from Chinese Hot Bean Paste.
