Charbroiled Steak (Cajun Corner)


If ya got to put sauce on a steak, you didn't cook it right. Steak should be served by its self. But, I found this and geez this is good. So...


30 ounce sirloin steak fat removed
3/4 cup apple cider
1 onion chopped
2 tablespoons cornstarch
1 8-ounce plain yogurt
1 teaspoon parsley
1 dash of Tabasco sauce
2 cloves garlic chopped
1 tablespoon green onions chopped
1 teaspoon season mix
1/2 teaspoon black pepper
1 teaspoon meat tenderizer


Season Mix:
1/4 teaspoon salt
1/8 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon red pepper
1/8 teaspoon black pepper
1/8 teaspoon oregano
1/8 teaspoon thyme


Defat steak and sprinkle with 1/2 teaspoon black pepper and 1 teaspoon tenderizer. Heat coals. When coals are white, apply steak to grill. Add wet mesquite after 5 minutes. Grill steak to desired doneness.
For the sauce: add cider, onion, green onions, Tabasco, garlic, and season mix to sauce pan. Simmer 4 minutes. Add cornstarch to yogurt. Stir into onion mixture and simmer 3 minutes. Pour desired portion of sauce over steak and sprinkle with parsley. Serves 5 people, 6 ounce steak portions.
