Pergola Anchoring/Building Question-Florida

There is an area in our back yard that is roughly 20 x 15, we are going to be removing a large stone pieces that are cemented in because they don't match one another and replacing them with Flagstone pavers. The layout is essentially a U shape with concrete walls on 2 sides and a screened in porch on the other side. We are located near Tampa. We weren't planning on doing this now but I since we're doing the pavers I figure I need to anchor in the posts before the pavers are in place. The ultimate goal here is to be able to have an outdoor ceiling fan mounted and grow confederate jasmin over the top to operate as a quasi-roof (we've done this at my dads beach house). What should I be using to anchor the posts in if my surface is dirt? Also, what should I be using for the construction, sizes of the wood posts, boards and such? I'm new to this but eager to take a stab at it.

Dig or 8 inch holes (rental hole digger, any type). In florida, frost probably doesn't matter but in Ohio we try to "bell" out the bottom of the hole. Add stones or bricks to the bottom of the hole (you don't want the post to be cemented in concrete so that what can drain down into the soil). You can simply backfill with concrete (with your posts in). IT really doesn't need to be mixed with water, moisture fromthe ground will cure the concrete. On this big of a project you probably want to go with 6x6's for the posts.
