Counterflashing chimney


I got through the step flashing and apron and all of that last night for flashing my chimney, but it got dark and before I get up on the roof after work to finish with counterflashing I wanted to ask some questions..

First of all, about the mortar... Can I use the pre-mixed mortar repair that is in the 20 lb tub or 10 oz tube for this?

Am I correct that the order of operations is that I cut the groove, put in the mortar and then push the counterflashing in?

Does the groove have to be at an existing mortar joint? My chimney is made from cement blocks rather than smaller bricks. Seems like I'd end up with half the chimney covered with flashing.
