cement additive

A brick mason told me there is an additive that can be added to your cement mix that makes it hold better when you are working over head with brick veneer - any idea what it's called

Bonding agent, just make sure you get one that specifically states that it's an admixture, meaning it can be added to the mortar rather than the two substrates (the brick & ceiling in your case) directly.
