I did get the two mixed up, in the 5/8 we only used the 12' sheet.

Still, even with a lift it's a lot more work then just a skim. 5/8" is not for ceilings unless it's to meet code.

Drywall will be the best for your laundry room as they are lightweight and cost efficient product for renovation work.

most of the ceiling DW is up. just have to add a 4" piece to finish to the wall. all tapered joints, so finishing will be easy. pics later.
