three pahse to single phase

I removed an old proof and bake oven and replacing it with a knew one. My question is that the old oven was hard wired three phase and the new one is hard wired single phase. Can is just use the same three phase wires and just cap off the the two extra wires and not have any problems? Or do I need to run all new lines and new a breaker for it?

A) It all depends on the draw of the new oven and the size of the circuit and wires run to the old. If they are about the same size the new oven will draw considerable more amperage due to having one less hot wire.

B) If you cannot answer what you are asking here you should NOT be doing it. This is a job for an electrician.

You would only have one extra wire.

Single phase = 2 hot wires.

Three phase = 3 hot wires.

Either of these may or may not have an additional white/neutral wire. Both should have an additional green or bare ground wire.

Provide more detail or hire someone
