electrical wiring

How do you connect a 240V electric cooktop with three wires to the 240V service from the electric panel which is 4 wires?

Cap the white wire from the panel and don't use it.
Connect the the ground wire from the cooktop to the bare ground from the panel.
Connect the two hots from the cooktop to the red and black wires from the panel.

If the cooktop is 240 volt only, not 120/240, you would connect the black and reds to the cooktop leads and connect the grounds together. Just cap the white and tuck it out of the way in the box.
