soffit with cathedral ceiling

Ok, for starters I am a newbe. So on that note, I am trying to build a soffit along a cathedral ceiling. This is to hide the sewer, water and electric to the in-laws quarters above the garage.
rerouting the aforementioned utilities is not an option.
I have attached an image of the area I want to build the soffit.
Is there a safe way to accomplish this task?
My original thought was to attach a 1'' x 12" wood plank to the support beams but my concerns are will they be enough to support the soffit with drywall?
someone mentioned that I simply build a box with plywood and paint it.
any direction with this would be great.

We nailed a 2x2 to the wall level under the pipes.
And another beside the pipes on the ceiling. On the one on the ceiling we hung 1/2" osb. or 1/2" plywood That is cut to drop down to level with the bottom of the 2x2 on the wall. Add another 2x2 to the inside of the bottom for that plywood. A couple blocks between the 2 lower 2x2 to lock the shape straight. with those blocks any wave in the outer wall can be corrected so your box is straight.
Ready for drywall.
To make sure everything stau straight measure each end and use a chalk line to mark wall and ceiling.

Search the term "bulkhead framing" then go to images.

1x framing might hold it, but for a solid one frame it with 2x4.

I'm using 2x2 framing to keep the weight down also my concern is I only have 4 points of support from the top to hold this. Will that be enough?

You will have rafters ever 16 or 24" on the vaulted part, I would think similar in the flat ceiling area.
