Replacing wholes sections of an old barn

Hi All. So I'm working on an old Turkey coup in my backyard that dates around the 1950s. Its stick construction with 12 ft centers and a tin roof measuring 50x200 feet. Its taken a beating over the years and I've about given up on Professional Contractors. They keep coming out, looking and then not doing anything. So I've decided to start the remodel myself...

So I'm hoping for pointers on a two areas.
1) When I start taking sections down, I'll need to stabilize the existing structure. Is there some kind of rule-of-thumb on how much cross-bracing I should add before I start demo? With 12 ft centers, I'll need ~15 feet board lengths to reach diagonal between vertical wall studs. The existing wood is really old, so I'll probably need to use really long screws to hold it together.

2) The roof starts at 8 feet and goes up to 14 ft at the middle of the building. The roof is tin without any backer board so it can't be walked on. I really don't want to rent a lift for a project that's going to take quite a while to complete since I'm probably going to have to do it myself. Anyone have any good ideas on how to get up that high without an expensive bucket rental? Or at least lift stuff up there? For antenna towers we use a Gin-pole, but that doesn't seem like a thing for building construction.

What's the floor like?

Can you use safe-way scaffolding?

What purpose is your intended use, more turkeys, living, other.

The floors is mostly dirt. The foundation is 12 deep x18 wide inch footer that runs the entire parameter. The purpose is to rebuild with higher strength and use for horses and animal feed storage. Its kind of dangerous as it is. Many of the trusses have failed at this point and the roof is only being held up by the vertical 4x4 posts that are spread out through the structure.

I'm trying to post a picture but the forum keeps saying I have to post 1 post to post a link. Which is odd...

Good call on the scaffolding. I found some people selling 12 foot tall sets for $375 down in LA on Craigslist. Looks like I'll be making a trip this weekend. I'm almost tempted to get the 18 foot tall set for $475...
