Sealed Air Gap vs Solid Material


I'm planning on building a smoker and to insulate it, I was going to build an outer shell that would leave a 2" gap all around the smoker. That gap would be sealed off (but not under vacuum). Would it be better to leave the 2" gap sealed with only air inside or would stuffing it with insulation be better?
