Ah, got it now. So you're looking to just remove the insulation in the soffit bay that has the vent? Yep, that one shouldn't be blocked with insulation. You could probably leave some of the insulation in the rest of them that aren't vented. You don't want to take away insulation except where it's blocking the airflow to vent the roof.
My guess is that it's not coming out easily because the paper backing (vapor barrier) is attached to the rafter tails. Faced bats are typically stapled to hold them in place. If it is, then it definitely needs to come out too since just pulling the pink fiberglass part without removing the paper will still block the vent.
You could try reaching in there with a utility knife and lightly slicing along the edge of the rafter tail to cut the paper facing. Be careful reaching in there though...not much holding that soffit vent in place and you don't want to push it out.

I can even get back there to try to cut it. My husband and I have tried. We even tried a tree cutter and that didn't work.

yep, not the easiest place to get into. You'd have to put some planks across the ceiling joists and belly crawl in there! Not fun and you really have to be careful to not come through the ceiling, but then the alternative is to get there from the outside on a ladder if you can remove those vent panels from the outside without damaging them. Pick your poison or call in a contractor.

maybe try one of these on a pipe or stick... the challenge is the way the fiber run... but if you can get something like this in there and compress it sideways. maybe you can get it out?
