So I understand what the straight through the roof vent is for, but what about the gooseneck style vents. I have them on all sides of the house down here in Florida. Are they plumbing vents? exhaust vents? roof vents?

Most likely just roof vents but without a picture it's anyone's guess.
Not sure why some places choose that style instead of a ridge vent.

If they're on the side of the house then it's possible they're the intake and exhaust lines from a newer high-efficiency furnace. One's pulling in fresh air for combustion and the other's the outgoing exhaust.
