can you use cobra ridge vent in a mobile home with cathedral cieling

...for venting the ridge?

I see no reason why not.

If this is a DIY project, spend the extra bucks and get a quality rigid ridge vent (i.e. GAF or Air Vent II).

Ridge vents are part of a roof system. You will need to check if you have soffit vents for air intake and some sort of baffles behind the insulation in the ceilings to allow the air to flow from the soffits to the ridge. If you have not soffit vents and baffles than the ridge vent really isn't doing much, but it cant hurt the roof.
