Roll Roofing Advice Needed

I am tasked with re-roofing my retired aunt's garage and I need some advice please. It currently has 2 layers of mineral surfaced roll roofing that is worn and leaking. The pitch is just under 2:12. With a search of the internet, I see that quite a few people poopoo roll roofing.

This has to be a DIY job and we cannot afford to hire roofers to torch in EPDM roofing.

I have never done this before but I have some experience de-shingling a roof, helping with a shingling job and I am confident I can follow instructions.

1) Is there an alternative to roll roofing that is affordable and able to be installed by a DIYer?

2) Is there any reason I should or should not install roll roofing over the old roll roofing? I would have to flatten the ripples in the old roofing.

3) Having installed the roll roofing would anyone recommend for or against using a white latex/rubber coating on top of the finished application (like this: DuRock Coolflex)?

Any suggestions and help would be very appreciated.

Sure is. Tear all that off, and get a nailable SBS base, interply and cap sheet.

There is no way to just go over that mess.
Plan on having to replace some of the sheathing since it's been leaking.

You cannot torch EPDM. It is a cured elastomer, like an inner tube, not a Modified Bitumen

The guys are correct. Tear it all off to the deck, recover with 1/2 inch plywood, Nail a G2 Glass base sheet with cap nails and install GAF Liberty or some other peel and stick. You can also use cold process, Do not torch. You will burn down gram-ma's garage. You will need to get some gravel stop and drip edge bent up by a local sheet metal shop.
.032" Aluminum Minimum.

PS Wear a good mask when you tear off, there may be some AB in that mix. It kind of looks like it.
