patching gaps on roof
If you had to patch/fill some not too big but not too small gap somewhere on roof, what are best options? Considering gaps that might also not be flat but angled. Also assuming you not replacing shingles or flashing. Just asking regarding short term patch job.

Foam like gap filler? Caulk? Roofing cement? Custom piece of wood or metal to wedge into gap or cover it? Real concrete cement?

All depends on the size of gap/hole. An old vent hole (8" x 8") I will use wood (a lot of people will gladly use sheet metal?????).
If it's a lag bolt hole from say a satellite dish, then caulk the hole and cover with a small piece of sheet metal or shingle.

What type roofing do you have, there's at least a couple dozen differant types.
Got a picture?
Makes me wonder when your saying gaps, not holes.
