Adding Gable porch in NNY

I have a house in Northern New York that was built in 2007. I'm adding a Gable roof to the front porch and want to know the easiest way to tie the new gable into the existing roof.

The gable will be 5/12 pitch. Doing some research I see there are 3 basic ways to do it; Open metal Valley, closed cut valley or weaving the valley. I'm a competent DIYer but have not done much roofing. My building inspector had no input on the subject, he said I could use any of the 3 methods. I'm just wonder considering the weather here in the winter if one method is prefered over another, all the old construction here has the open metal flashing and most of the new has the weave.

Any thoughts from you Pros would be greatly appreciated.
