To Add Ridge Vent or NO ?
I have a 1950's style ranch with gable vents on each end. We are currently getting prices on putting new shingles on...some guys are saying we need the roof ridge vent, some are saying we dont because of the gable vents ?

Additional ventilation on the ridge without make up air does little to nothing.
How big are the gable vents and what the footprint of the home? Do you have existing soffit vents?

House is 36 x 30... Gables might be 12" wide ??

To Add Ridge Vent or NO ?
If not issues with sheathing and moisture, air seal and insulate the attic floor and improve the efficiency of the home while decreasing the necessity for ventilation.
The fact that you don't have any moisture, mold, or mildew issues indicates that the ventilation has been sufficient to date. Adding a ridge vent without providing make up air is just plain idiotic as it will draft/draw air from the living space below.

Yes.
Attic ventilation has nothing to do with shingle cooling nor is that what its intended purpose is. If you don't have mold, mildew, or moisture issues in the attic, you should not have any issues in the future. Air Seal and insulate the attic. GBR posted up a great link.
