You should have a ridge that connects the two 30 degree roofs at their mid-span. Taper out to the roof edges. If the price is right you can get rigid polyiso panels at 1/4" per foot slope to get it done. Cover with a low-slope roofing material of your choice.
If you want all shingles, run the ridge beam from the lowest of the two 30 degree ridges to the other at the heigh to the shingled roof ridge beam. Custom cut the birds mouth seats for the infill joist framing. sheath and shingle.
The red is showing the new roof slope that needs to be added. The black is the existing shingle roofs. The red will tie into the black ridges if you want to shingle the surface. It can be lower, but you'll have to use a membrane.
