Wet bed or thin set with Ditra for stone tiles

Two more questions;

Once I put down 3/4" plywood subfloor after enforcing joists, would it be just as good to use SLC and set tiles? I like that the floor will be level with SLC.

If it is impossible to sister in the whole length of the joist, is it equally effective to sister in with a few layers of shorter pieces staggered and tied together?
