I have porcellain tile in my house, I believe the grout I used specified 30 days before sealing if I'm not mistaken. As far as walking on it, 24-48 hours should be fine, light use for a few days, don't roll a grand piano over it the next day!

the sealer I used on my grout said to let the grout cure at least 3 days before sealing. read the label on the sealer you plan on using.

Safe to walk on in 12 to 24 hours---read the sealer labels--they vary a lot by brand---

I would be more inclined to go by what the GROUT mfr's directions say, since you are applying someone to their product, if the grout says 30 days then I would ignore the sealer's 3 day suggestion.
